Bean Soup with Black Beans
3 - 15 oz. cans of black beans
2 - 15 oz. cans of fat-free chicken broth
1 medium onion, diced
3 boneless skinless chicken breasts, cut into small pieces
3 Tbsp. olive oil
3 Tbsp. chili powder
1 Tbsp. garlic powder
2 tsp. ground cumin
(1 additional can of your favorite beans can be added to the recipe if you desire and decrease the amount of chicken.)
Saute onion in oil over medium heat until transparent. Add chicken pieces. Stir until slightly browned. Add black
beans [including the liquid], then add broth. Add chili powder, garlic powder and cumin. Bring to a boil on high heat, then lower to medium heat. Simmer 30 minutes.
