Recipe Introduction
This rich dessert packs a triple hit of chocolate.

- 16 chocolate graham cracker sheets
- 1/4 cup sugar
- 1 tablespoon butter or stick margarine, melted
- 1 large egg white
- Cooking spray
- 1/2 cup semisweet chocolate chips
- 3 tablespoons dark rum
- 1/4 cup chocolate-flavored syrup
- 1 (8-ounce) block fat free cream cheese, softened
- 1 (8-ounce) tub light cream cheese, softened
- 1 cup sugar
- 3 tablespoons unsweetened cocoa divided
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 (8-ounce) container 50%-less-fat- sour cream (such as Daisy)
- 2 tablespoons sugar
Instructions
- Preheat over to 350 degrees.
- Place graham crackers in a food processor, process until crumbly. Add 1/4 cup sugar, butter, and egg white; pulse 8 times or just until moist. Press mixture into bottom and 1 inch up sides of an 8-inch springform pan coated with cooking spray. Bake at 350 degrees for 10 minutes. Let cool on a wire rack. Reduce oven temperature to 300 degrees.
- Combine chocolate chips and rum in a 2-cup glass bowl or measuring cup; microwave at HIGH 1 minute or until chocolate melts, stirring until smooth. Stir in chocolate syrup.
- Place cream cheeses in a large bowl; beat at medium speed of a mixer until smooth. Gradually add 1 cup of sugar, 2 tablespoons cocoa, and salt beating until smooth. Add chocolate mixture and vanilla; beat just until blended. Add eggs, 1 at a time, beating just until blended after each addition (do not overbeat). Pour into crust.
- Bake at 300 degrees for 40 minutes or until almost set. Turn oven off.
- Combine remaining 1 tablespoon cocoa, sour cream, and 2 tablespoons sugar in a bowl; stir with a whisk until blended. Spread sour cream mixture over cheesecake. Let cheesecake stand in oven with oven door closed for 45 minutes. Remove from oven; run a knife around edges of cake to loosen cake from pan. Let cool completely on a wire rack. Cover and chill at least 8 hours. Yield 12 servings (serving size: 1 wedge)
