    Recipe Introduction


    This rich dessert packs a triple hit of chocolate.


    List of Ingredients


    • 16 chocolate graham cracker sheets
    • 1/4 cup sugar
    • 1 tablespoon butter or stick margarine, melted
    • 1 large egg white
    • Cooking spray
    • 1/2 cup semisweet chocolate chips
    • 3 tablespoons dark rum
    • 1/4 cup chocolate-flavored syrup
    • 1 (8-ounce) block fat free cream cheese, softened
    • 1 (8-ounce) tub light cream cheese, softened
    • 1 cup sugar
    • 3 tablespoons unsweetened cocoa divided
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • 1 (8-ounce) container 50%-less-fat- sour cream (such as Daisy)
    • 2 tablespoons sugar


    Instructions


    1. Preheat over to 350 degrees.
    2. Place graham crackers in a food processor, process until crumbly. Add 1/4 cup sugar, butter, and egg white; pulse 8 times or just until moist. Press mixture into bottom and 1 inch up sides of an 8-inch springform pan coated with cooking spray. Bake at 350 degrees for 10 minutes. Let cool on a wire rack. Reduce oven temperature to 300 degrees.
    3. Combine chocolate chips and rum in a 2-cup glass bowl or measuring cup; microwave at HIGH 1 minute or until chocolate melts, stirring until smooth. Stir in chocolate syrup.
    4. Place cream cheeses in a large bowl; beat at medium speed of a mixer until smooth. Gradually add 1 cup of sugar, 2 tablespoons cocoa, and salt beating until smooth. Add chocolate mixture and vanilla; beat just until blended. Add eggs, 1 at a time, beating just until blended after each addition (do not overbeat). Pour into crust.
    5. Bake at 300 degrees for 40 minutes or until almost set. Turn oven off.
    6. Combine remaining 1 tablespoon cocoa, sour cream, and 2 tablespoons sugar in a bowl; stir with a whisk until blended. Spread sour cream mixture over cheesecake. Let cheesecake stand in oven with oven door closed for 45 minutes. Remove from oven; run a knife around edges of cake to loosen cake from pan. Let cool completely on a wire rack. Cover and chill at least 8 hours. Yield 12 servings (serving size: 1 wedge)
