    Weight Watchers Just Like Home


    Recipe Introduction


    This is one of those good, everyday meals. It's easy and fast, and uses ingredients that you usually have on hand. Just add a salad and some bread to make a warm, filling meal.


    List of Ingredients


    • Cooking Spray
    • 1 pound skinned, boned chicken breasts, cut into 1-inch pieces
    • 1 cup slivered onion
    • 1 cup thinly sliced celery
    • 2 tablespoons all purpose flour
    • 3 1/2 cups chicken broth
    • 2 cups peeled (1/2 inch thick) sliced carrots
    • 3/4 teaspoon dried thyme, divided
    • 1/4 teaspoon pepper
    • 1 cup reduced-fat biscuit and baking mix (such as Bisquick)
    • 1/3 cup fat-free milk


    Instructions


    1. Coat a Dutch oven with cooking spray, and place over medium-high heat until hot. Add chicken and onion; saute 5 minutes. Add celery; saute 2 minutes. Sprinkle flour over chicken mixture; saute 1 minute. Gradually add broth, stirring until well-blended. Stir in carrot, 1/2 teaspoon thyme, and pepper. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.
    2. Combine remaining 1/4 teaspoon thyme, baking mix, and milk in a small bowl; stir well. Spoon dough by tablespoons into 12 mounds on top of chicken mixture. Reduce heat to medium-low; cover and cook 15 minutes or until dumplings are done (do not boil). Yield: 4 servings (serving size: 1 1/2 cups chicken mixture and 3 dumplings).


    Final Comments


    Note: To measure bisquit and baking mix, first stir the mix several times. Then lightly spoon mix into a 1-cup dry measuring cup until it mounds slightly. Level the top using a striaght-edged spatula or knife. Do not tap caup (baking mix will be lumpy.)
