Roast Turkey With Giblet Gravy
List of Ingredients
18-20 pound turkey
1/2 cup butter or margarine
1/2 cup minced parsley
1 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon thyme
1 cup flour
a little poultry seasoning
1 quart hot turkey stockRecipe
Roast turkey as usual.Cook giblets separately. Save neck mest for gravy. Put the rest of giblets in dressing.Take meat off of neck bones,and cut up.In large sauce pan,melt butter.Add neck mest,parsley,onion,salt,pepper,and thyme/Cook over medium heat about 10 minutes,stirring occasoinally.Add flour to mixture in pan. Cook 2-3 minutes stirring once in awhile. Turn up heat and gradually add 1 quart of hot turkey stock and cook 3-4 minutes. May add browning sauce and, or 1 can of cream of chicken soup. Enjoy. Really good gravy. Can be made ahead using chicken stock too.
