Mexican Cornbread

Makes 6 - 8 servings.
List of Ingredients
- 2 cups cornmeal
- 1 cup flour
- 3 tsp baking powder
- 2 tsp salt
- 1/4 cup shortening
- 1 medium onion, chopped
- 1/3 cup pimento, chopped
- 1/4 cup green pepper, chopped
- 1 14 oz can creamed corn
- 1 cup grated sharp cheddar cheese
- 3 eggs, beaten
- 1 1/2 cups milk
Instructions
- Mix ingredients in the order given.
- Place 2 or 3 tblsp oil in a hot heavy pan or skillet.
- Pour the batter into the pan and bake @ 425F until nicely browned, 25-30 minutes.
- To serve, cut into squares or wedges, serve with butter.
