    Makes 6 - 8 servings.


    List of Ingredients


    • 2 cups cornmeal
    • 1 cup flour
    • 3 tsp baking powder
    • 2 tsp salt
    • 1/4 cup shortening
    • 1 medium onion, chopped
    • 1/3 cup pimento, chopped
    • 1/4 cup green pepper, chopped
    • 1 14 oz can creamed corn
    • 1 cup grated sharp cheddar cheese
    • 3 eggs, beaten
    • 1 1/2 cups milk


    Instructions


    1. Mix ingredients in the order given.
    2. Place 2 or 3 tblsp oil in a hot heavy pan or skillet.
    3. Pour the batter into the pan and bake @ 425F until nicely browned, 25-30 minutes.
    4. To serve, cut into squares or wedges, serve with butter.
