    Carrot and Pineapple Cake

    List of Ingredients


    • 3 cups flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp baking soda
    • 2 cups sugar
    • 3 eggs well beaten
    • 2 tsp vanilla
    • 1 1/2 cups oil
    • 2 cups shredded carrots
    • 1 small can crushed pineapple drained.
    • 1 cup chopped pecans or walnuts
    • Icing: 1 8 oz package cream cheese
    • 1 to 2 cups icing sugar
    • 1/2 tsp vanilla
    • Spread on cake when cool.


    Instructions


    1. Sift all dry ingredients together.
    2. Mix eggs, oil and pineapple...combine with dry ingredients.
    3. Add nuts and carrots.
    4. Bake in a 9 x 13 pan at 350 degrees F for 45 minutes
