Carrot and Pineapple Cake

List of Ingredients
- 3 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups sugar
- 3 eggs well beaten
- 2 tsp vanilla
- 1 1/2 cups oil
- 2 cups shredded carrots
- 1 small can crushed pineapple drained.
- 1 cup chopped pecans or walnuts
- Icing: 1 8 oz package cream cheese
- 1 to 2 cups icing sugar
- 1/2 tsp vanilla
- Spread on cake when cool.
Instructions
- Sift all dry ingredients together.
- Mix eggs, oil and pineapple...combine with dry ingredients.
- Add nuts and carrots.
- Bake in a 9 x 13 pan at 350 degrees F for 45 minutes
