    Recipe Introduction


    This is the cheesecake without the sauce topping. Use red and green cherries for a festive look at Christmas.


    List of Ingredients


    • 30 Paulin's graham crackers, rolled fine
    • 1/4 tsp salt
    • 1 tblsp sugar
    • 1/2 cup butter
    • **********************************************************************
    • 1 lb cream cheese
    • 1/2 cup sugar
    • 1/4 tsp salt
    • 2 eggs, separated
    • juice and rind of 1/2 lemon
    • 1/2 cup of glazed cherries, cut in quarters


    Instructions


    1. To the crumbs, add salt, sugar and butter.
    2. Blend as for pastry, and put 2/3 of the mixture in an 8 X 8 buttered pan, patting down firmly.
    3. Combine cream cheese with sugar and blend well.
    4. Add the salt, beaten egg yolks and lemon juice and blend well.
    5. Add the quartered cherries and lemon rind and mix together.
    6. Fold in the beaten egg whites.
    7. Pour onto the crust and sprinkle remaining graham cracker mixture on the top.
    8. Bake at 350F for 40 minutes.
