These were a tradition for Christmas, you know the cookies with the cherry in the middle.





List of Ingredients



• 1/2 cup butter
  
• 1/4 cup white sugar
  
• 1 egg , separated
  
• 1/2 tsp vanilla
  
• 1 tblsp lemon juice
  
• The rind of one lemon
  
• 1 cup flour
  
• Crushed walnuts
  
• Marichino cherries
  






Instructions



1. Cream the butter and sugar.
   
2. Add egg yolk lemon juice, rind and vanilla.
   
3. Blend in the flour.
   
4. Roll into 1" balls, dip into beaten egg white, then into crushed nuts.
   
5. Press half a cherry into the centre.
   
6. Bake for 20 minutes at 350F.
