Oatmeal Raisin Cookies

Recipe Introduction
These are my favorite cookies. You may subsititute chocolate chips, coconut or whatever you like for the raisins. Sometimes I do half raisins and half chocolate chips. Pre heat oven 350F. Makes approx. 4 dozen.
List of Ingredients
- 1 cup lard
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 1/2 cups flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp vanilla
- 1 tsp water (or a little more if needed)
- 2 cups raisins
- 2 cups rolled oats
Instructions
- Cream the sugars and the lard until smooth and well blended.
- Add the eggs and beat until smooth.
- Pour the vanilla and water over the raisins and set aside.
- Sift the flour, salt and baking powder together.
- Add half of the sifted ingredients to the batter and stir well.
- Mix the rest of the dry ingredients into the rolled oats.
- Add the raisins alternately with the oat mixture to the batter. The mixture will be quite stiff.
- Drop by teaspoonful onto cookie sheet and press down with a fork.
- Bake at 350F for 12 - 15 minutes.
