Dundee Fruit Bars

List of Ingredients
- 1/2 cup butter or margarine
- 1/2 cup sugar
- 1 tsp vanilla
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 3/4 cup candied fruit mix
- 1/4 cup raisins
- LEMON GLAZE:
- 1/4 cup sifted icing sugar
- 1 tsp water
- 1/2 tsp lemon juice
Instructions
- Preheat oven to 325F and line a 9" square pan with waxed paper, grease the paper and sides of the pan.
- Blend the butter and sugar until light and fluffy.
- Add vanilla and eggs, beat thoroughly.
- Gradually add sifted dry ingredients.
- Stir in the fruit.
- Spread in prepared pan and bake in moderate oven for 25 - 30 minutes.
- Cool slightly, turn out on rack and peel off paper.
- Turn right side up and brush with glaze, cool and cut in squares.
Final Comments
Makes 24 bars.
