Pineapple Slice

- Bottom:
- 1/2 cup butter
- 1 cup flour
- 3 tblsp brown sugar
- Centre:
- 1 20 oz can or 2 14 oz cans of drained, crushed pineapple
- Frosting:
- 1 1/2 cups sifted icing sugar
- 1/2 cup butter
- 1 egg
Instructions
- Bottom: Mix together butter, flour and brown sugar, and smooth crumbs in an 8" X 8" or 9" X 9" pan.
- Press down gently and bake at 350F 15 - 20 mins. until light brown.....cool.
- Centre: Spread the pineapple on cooled, baked crumbs, cover with frosting.
- Frosting: Cream the butter and sugar well.
- Add the egg and beat until fluffy.
- Keep in the refrigerator until ready to spread on the pineapple.
