Rhubarb Bars

Recipe Introduction
This is really yummy and can be served warm or cold.
List of Ingredients
- 3 cups rhubarb, diced
- 1 1/2 cup granulated sugar
- 1 tsp vanilla
- 2 tbsp cornstarch dissolved in 1/4 cup cold water
- 1 1/2 cups sifted flour
- 1/2 tsp baking soda
- 1 cup brown sugar
- 1 cup butter or margarine
- 1 1/2 cups oatmeal
- 1/2 cup walnuts (optional)
Instructions
- In a large pan, mix rhubarb, sugar and vanilla.
- Add cornstarch and cook over low heat until rhubarb is tender, stirring contstantly until thickened.
- Remove from heat and set aside to cool.
- In a medium bowl, mix dry ingredients, cut in butter. Add nuts and combine well.
- Pat 3/4 of the crumb mixture in 9 x 13 pan. Spread the cooled rhubarb on top.
- Sprinkle the remaining crumbs on top.
- Bake at 350F for 40 minutes.
Final Comments
For variety, subtitute 1 cup of strawberries for one of the cups of rhubarb.(add red food colouring to make the filling brighter)
