Chili Sauce - Like Junior's

Recipe Introduction
Junior's is a local Winnipeg "burger joint" that serves burgers & dogs with a terrific chile sauce with a greek flavour. This is a favorite of ours.
List of Ingredients
- 2 tbsp olive oil
- 2 onions finely minced
- 4 garlic cloves
- 2 lbs ground beef
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp oregano leaves
- 2 tsp cocoa
- 2 tsp salt
- 1 tsp celery seeds
- 1 tsp tumeric
- 1 tsp cinnamon
- 1/2 tsp hot red pepper flakes
- 2 cups tomato juice
- 2 cups beef broth
- 1/4 cup cornmeal
Instructions
- Heat oil in Dutch oven set over medium heat.
- Add onion & garlic .. saute until translucent, stirring occaisionally..about 10 minutes.
- Add ground beef and cook until brown, stirring frequently...about 8 minutes.
- Combine chili powder with ground cumin,oregano, cocoa, salt, celery seeds, tumeric, cinnamon & hot red pepper flakes.
- Mix spice mixture into ground beef & stir for 3 minutes.
- Add tomato juice & broth and bring to a boil stirring occaisionally.
- Reduce heat and simmer until liquid is reduced by 1/3....about 1 1/2 hours.
- Add cornmeal and stir for 2 minutes.
- Cool slightly then cover and freeze in airtight container up to 2 months or refrigerate up to 3 days.
- Warm over medium low heat.
Final Comments
Great on burgers and hotdogs... use on pasta too!
