Dried Cherry & Chocolate Biscotti

Recipe Introduction
Preheat the oven to 350F. Use parchment paper on a cookie sheet.
List of Ingredients
- 2 cups flour
- 1/4 cup cocoa powder
- 2 tsp baking powder
- pinch of salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup unblanched whole almonds (or filberts)
- 1 cup dried cherries (or cranberries)
- 3 large eggs
- 3/4 cup sugar
- 1 tsp vanilla
Instructions
- Mix dry ingredients, nuts and cherries in one bowl.
- Mix eggs, sugar, and vanilla until smooth in a larger bowl.
- Add the dry to the wet and mix into dough.
- Turn dough out on counter and knead a couple times.
- Shape dough into a log 12 inches by 4 inches.
- Place on parchment paper on a cookie sheet.
- Bake 30 minutes, remove from the oven & cool completely.
- Slice into 1/4 inch pieces, place on parchment lined cookie sheet.
- Bake again for 12 to 14 minutes.
