Twice Baked Potatoes

Makes 8 servings (75 calories each when using skim milk)
List of Ingredients
- 4 medium potatoes
- 1 cup low fat cottage cheese
- 1/2 cup skim milk or buttermilk
- 1 tblsp minced onion
- 1/2 tsp salt
- sprinkle of paprika
- sprinkle of pepper
- parsley for garnish
Instructions
- Scrub potatoes under cold water until clean, prick each potato with a fork.
- Bake at 400F for 45 minutes or until tender.
- Cut hot potatoes in half lengthwise.
- Scoop out and mash, mix together with the cottage cheese, milk and onion.
- Beat until fluffy and put back into the potatoes.
- Sprinkle with paprika, pepper and parsley.
- Bake 10 minutes more until golden.
