These are a must at portuguese functions! Always the first to go.
List of Ingredients
2 large russet potatoes, peeled and quartered
1/8 tsp salt
3 medium cod fillets, about 12 oz
1/2 small onion, finely chopped (saute first )
1/4 tsp baking powder
2 tbsp fresh parsley, finely chopped
salt to taste
vegetable oil for frying
Instructions
Boil potatoes in salted water until fork tender. Drain and mash well; cover with a clean cloth and set aside.
Place fish fillets in simmering water in a medium saucepan. Poach for 3 for 4 minutes or until cooked through. Remove from water and set aside to cool slightly. Then, using your hands, flake fish into very small pieces, carefully removing any bones.
Combine mashed potatoes with fish, onion and parsley and mix thoroughly. Add the eggs, baking powder and mix together well.
Place 2 to 3 inches oil in medium high-sided saucepancand heat. Using a soupspoon, scoop out cod mixture and gently slip into hot oil, frying in batches for 5 to 6 minutes or until golen. Be careful not to overcrowd pan. Remove with a slotted spoon, set on a tray lined with paper towels. Season with salt if desired or needed.

Final Comments
You can also use any type of fish, not suitable for tuna or salmon. Good for the fishermen to make with their catch. I have made these with pickeral (walleye), and some ohter inexpenise fish. Cod is the best and most flavourful choice.
