Recipe Introduction
Chicken cooks way faster than beef that is why the recipes are for 6 hours. But I have used this one and let it run 8-9 hours, adding 1-2 cups of water and use frozen chicken (the water so it doesn't dry out) You can also use frozen bell pepper strips with frozen chicken breasts to save time in the end ... ENJOY!
List of Ingredients
5 boneless, skinless chicken breasts
2 med. green bell peppers
1 large red bell pepper
1 large yellow bell pepper
1 med red onion
4TB fajita seasoning
4TB taco seasoning
4 oz light sour cream
4 oz salsa
12 med fat free flour tortillas Recipe
Place 5 frozen breasts in crockpot (this is when you add the add'l water) and cook on LOW for 6-8 hours (10 will just make it melt in your mouth). Remove chicken and shred. Drain water and broth. Return to crockpot and place bell pepper strips on top of shredded chicken. Sprinkle seasonings on top and cover, cooking for add'l hour, stirring occassionally. (omit the last hour if using frozen bell peppers and just throw everything in in the beginning) Serve with fat free tortillas and sour cream (it's included in the points!)
