Here is a selection of recipes
1.I have a put-together, but not the recipe you mentioned. I had this the other night, and it was wonderful. Here is what I did:
1 bag frozen cauliflower-cook about twice the time it tells you to in the micro
Mash it first with a fork, then with beaters. Then add in 1/4 c. light sour cream, garlic salt to taste, 2 T. ff mayonnaise (I know it sounds weird, but it really helps it come together), and fresh ground black pepper. Mix/mash some more until desired consistency. Serves 3-4 at 1pt. per serving. Hope this helps! It's really good, although I don't know how it'd be without garlic seasoning.

Cauliflower "mashed potatoes"

Ingredients
8 cups fresh cauliflower
1 tsp. reduced calorie marjarine
2 tsp. fat free cream cheese
1 tblsp minced onion
1 tsp. garlic powder
2 tblsp fat free half and half
salt and pepper to taste
Instructions
steam cauliflower until very soft.
Saute in melted margarine with garlic,onion,salt and pepper.Add remaining ingredients. mix with a hand mixer to desired consistency.

**Sorry, I don't know who to credit with this recipe... But I LOVE IT! I always use light velveta cheese since I've yet to find laughing cow cheese** Enjoy! Jess
~ Cheesy Fauxtatoes ~
2 very large servings @ 2 points each.
1 16-oz bag frozen cauliflower
4 wedges Laughing Cow cheese
1/4 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
Place cauliflower in a sauce pan filled with cold water and a little garlic and place over high heat, bring to a boil and let cook until soft. Place cheese and spices in a food processor fitted with an S-blade. Drain cooked cauliflower and place into the food processor. Whirl with the pulse button until cauliflower is pureed and all ingredients are combined. You can also mash with a fork
