    Green Beans w/Caramelized Shallots

    List of Ingredients


    • 2 lbs. haricots vert trimmed(tiny green beans)
    • 3 tbs butter
    • 1 tbs light brown sugar
    • 1 tbs olive oil
    • 1 lbs. shallots, sliced thick lengthwise and peeled
    • 2 tbs red wine vinegar


    Instructions


    1. Cook green beans in boiling salted water 3-4 minutes, drain, plunge into ice water
    2. Melt butter and brown sugar with olive oil in large skillet over med-high heat
    3. Add shallots and saute 2 minutes, reduce heat to med-low add vinegar and saute 10 minutes until golden
    4. Increase heat to med-high add green beans and saute 5 minutes until thoroughly heated
    5. Season with salt and pepper to taste
