    1 (8-ounce) package Philadelphia fat-free cream cheese
    1 cup (one 8-ounce can) crushed pineapple, packed in fruit juice, drained, and 2 tablespoons liquid, reserved
    1 full cup (6 ounces) diced cooked chicken breast
    ¼ cup (1 ounce) chopped dry-roasted peanuts
    4 (6-inch) flour tortillas
    ½ cup shredded lettuce

    Recipe




    In a medium bowl, stir cream cheese with a spoon until soft. Add pineapple and reserved pineapple liquid. Stir in chicken and peanuts. Mix gently to combine.

    For each roll up, spread about ½ cup chicken mixture on a tortilla. Top with 2 tablespoons lettuce. Roll up and place on plate, seam side down. Serve at once or cover and refrigerate until ready to serve.
