    Healthy Exchanges Grandma Jo's Soup Kettle

    List of Ingredients





    1/2 cup chopped onion
    1 cup finely chopped celery
    2 cups (one 16-oz. can) Healthy Request Chicken Broth
    10 oz. (one 16-oz. can) great northern beans, rinsed & drained
    1 cup (5 oz.) diced cooked chicken breast
    1 cup chunky salsa
    1 tsp. dried parsely flakes

    Recipe




    In a medium saucepan sprayed with butter-flavored cooking spray, saute onion and celery for about 8 to 10 minutes or until tender. Stir in chicken broth, beans and chicken. Add salsa and parsley. Mix well to combine. Bring mixture to a boil. Lower heat, cover, and simmer for 15 to 20 minutes, stirring occasionally.
