Potato Puff Balls

2 large eggs or egg subsitute
1/2 teaspoon onion salt
1/8 teaspoon pepper
3 cups mashed potatoes
1 tablespoon margarine (or butter), melted
2 teaspoons chopped fresh parsley (or 1/2 teaspoon dried parsley
flakes)
Recipe
Beat eggs, onion salt and pepper in medium bowl until smooth.
Add potato. Mix well. Drop by 1/4 cupfuls onto greased baking sheet.
Bake in 350ºF oven for about 10 minutes until starting to set.
Remove from oven. Drizzle each puff with melted margarine. Sprinkle
with parsley. Bake for 20 minutes until puffed and lightly browned.
Makes 12 puffs.
