    Auntie Eva’s Creole Cornbread

    Could be a side dish also with the rice and corn in it. Would live to try it with some good beans over it!

    List of Ingredients




    2 c cooked rice
    1 c yellow cornmeal
    1/2 c chopped onion
    1-2 tb chopped seeded jalapeno
    1 tsp salt
    1/2 tsp baking soda
    2 eggs
    1 c milk
    1/4 c oil
    1 16 oz can cream style corn
    3 c shredded cheddar cheese

    Recipe



    Preheat oven to 350*. Grease 10” iron skillet or other baking dish and sprinkle with a bit or extra cornmeal. Mix wet ingredients. Mix dry ingredients. Mix wet, dry and rice/jalapeños . Add cheese. Pour into prepared pan. Bake 45-50 min until tests done.
