    Recipe Introduction

I made this for a friend who likes raisin pie. Turned out pretty tasty. I didn't top it with the cinnamon topping, but rather topped with a tub of cool whip after it had chilled.

    List of Ingredients

    1/4 cup cornstarch
    3/4 cup sugar
    1/2 teaspoon salt
    2 cups buttermilk
    1/2 cup raisins
    2 eggs
    2 tablespoons fresh lemon juice
    2 tablespoons butter or margarine
    1/4 teaspoon ground cinnamon
    1/8 teaspoon ground cloves
    1 baked 9-inch pie shell

Cinnamon Topping (recipe follows)(I topped with a tub of cool whip instead, after the pie had chilled)

    Recipe

    1) Combine cornstarch, sugar and salt in heavy saucepan; stir in buttermilk and raisins. Cook and stir over low heat until mixture thickens.

    2) Beat eggs; add small amount of hot mixture to eggs, beating constantly, then return to hot mixture.

    3) Cook and stir about 2 minutes.

    4) Remove from heat; stir in lemon juice, butter,
    cinnamon and cloves.

    5) Cook, stirring occasionally; pour into cooled
    pastry shell and chill.

    6) Just before serving, make Cinnamon Topping and
spoon over filling; sprinkle with additonal cinnamon,
    if desired.

    Cinnamon Topping

    1 cup heavy cream
    1/4 teaspoon ground cinnamon
    2 tablespoons sugar

    1) Combine cream and cinnamon and ship until cream
    holds soft peaks.

    2) Beat in sugar and spoon over pie.

    Serves 8
