    Granny Cossey's Peanut Butter Pie

    Recipe Introduction


    This is the best peanut butter pie I've ever had. My girlfriend, Sheila, and I used to make this pie as teenagers.

    List of Ingredients




    1 baked 9" pie shell (I use deep dish)
    1 c. powder sugar
    1/2 c. peanut butter (I use crunchy, but doesn't matter)

    1/4 c. flour
    2/3 c. sugar
    3/4 ts. salt
    2 c. scalded milk
    3 eggs, seperated
    2 tb. butter
    1/4 ts. vanilla

    Recipe



    Mix 1 c. powder sugar and 1/2 c. peanut butter till crumbles. Spread 1/2 of mixture in bottom of baked pie shell. Reserve other 1/2.

    Blend flour, sugar and salt together. Add to milk in saucepan over medium low heat, stirring constantly until thickens. Slightly beat egg yolks. Add 2 tb. pudding into egg yolks and then return egg yolk mixture gradually into pudding. Cook couple of minutes longer, stirring. Remove from heat, add butter and vanilla. Cool. Pour into pie shell. Make meringue from egg whites and a little sugar...spread over filling. Sprinkle rest of peanut butter mixture over meringue. Bake at 350* for 30 min.

    Cool.
