    1 ½ lb Ground beef
    1 Onion
    1 Large Can (22 0z?) Whole Green Chilies
    Approx. 2 ½ Cups Shredded Cheddar Cheese
    5 Eggs
    1 ½ Cups Milk
    ¼ Cup Flour
    3 tsp Cumin
    2 tsp Onion Salt
    1 tsp Pepper
    Cayenne Pepper to your liking

    Preheat oven to 375 degrees.
    Brown Ground Beef and Onion, drain (I also rinse) grease. Add Cumin, Salt, Pepper and Cayenne to beef mixture and stir. Taste and adjust to your liking if you want more flavor.
    Line the bottom of your casserole dish with whole green chilies (slice one side to they are fully open). It will not take the whole can, dice the rest for topping later. Layer meat over green chilies. Top with Cheese. Top off with the diced green chilies.
    In a separate bowl mix eggs, milk and flour. Mix well so there are no clumps. Pour over the casserole
    Bake for 40 min. Serve & Enjoy!!!
