    Soft, delicious bar cookie.

    List of Ingredients




    2 c. AP flour
    2 tsp. baking powder
    1/2 tsp. salt
    3/4 c. shortening
    1 c. sugar
    1/4 c. packed brown sugar
    1 egg
    1 tsp. vanilla
    1 c. mashed banana
    1 c. semisweet chocolate chips

    Recipe



    Preheat oven to 350*. Cream shortening and sugars. Blend in egg, then vanilla, then banana. Sift flour, baking powder and salt together and gradually blend into creamed mixture. Stir in chocolate chips. Grease 13x9" baking pan. Spread batter evenly into pan. Bake 25-30 min or until golden on top (do not overcook). Cool completely before cutting into bars. Store in air tight container.

    **When I have bananas that turn riper than we prefer to eat, I throw them, peel and all, into a ziplock into the freezer. When I make this or another baking recipe that calls for mashed banana, I just get out the required # of bananas, thaw, peel. They are actually easier to mash than a riper, fresh banana.

    ***These would be good frosted with ready made frosting, although I have not done this as of yet.
