White Chocolate Cranberry Biscotti

These are very tasty. Good "dunkers" in a cold glass of milk or eaten with hot tea, coffee or cocoa.
This was my first time to make Biscotti. My brother in law is of italian decent, so I like to make italian dishes for him and his children. This is a twice baked cookie.
List of Ingredients
1/2 c. butter, softened
1 c. sugar
4 eggs
1 tsp vanilla
3 c. ap flour
1 tb. baking powder
3/4 c. dried cranberries (I used cherry flavored dried cranberries or "craisins")
3/4 c. vanilla or white chipsRecipe
Cream butter and sugar. Add eggs, beat well. Beat in vanilla. Combine dry and gradually add to creamed mixture. Stir in cranberries and chips. Divide dough into 3 portions. On ungreased baking sheets, shape each portion into a 10"x2" rectangle. Bake at 350* for 20 min. or until lightly browned. Cool 5 min. Transfer to a cutting board; cut diagonally with a serrated knife into 1" slices. Place cut side down on ungreased baking sheets. Bake for 15 min or until golden brown (I undercooked mine a bit on this 2nd cooking, so they wouldn't be quite so hard). Remove to cookie rack and cool. Stor in airtight container. Yield 2 1/2 dozen cookies.
