    Garlicky Beef Enchiladas

    This is my favorite enchilada recipe! Especially with the "heart smart" extra garlic!

    List of Ingredients





    1 lb. ground beef
    1 med. onion, chopped
    2 tb. and a pinch of flour
    1 tb. chili powder
    1 tsp salt
    1 tsp garlic powder
    1/2 tsp ground cumin
    1/4 tsp rubbed sage
    1- 14 1/2 oz can stewed tomatoes
    SAUCE:
    4-6 garlic cloves, minced (or 1 tsp. garlic powder)
    1/3 c. butter or margarine
    1/2 c. and a pinch of flour
    1-14 1/2 oz. beef broth
    1-15 oz. can tomato sauce
    1-2 tb chili powder
    1-2 tsp ground cumin
    1-2 tsp rubbed sage
    1/2 tsp salt
    10-7 inch flour tortillas
    2 c. (8 oz) shredded Co-jack cheese (or cheddar)

    Recipe



    Over medium heat, brown beef and onion. Drain. Add flour and seasonings. Stir in tomatoes. Bring to boil. Reduce heat, cover and simmer 15 min. Meanwhile, prepare sauce.
    Saute garlic in butter till tender. Stir in flour until blended. Stir in broth, bring to boil.
    Cook and stir 2 min. Stir in tomato sauce and seasonings, heat through. Pour about 1 1/2 c. sauce into ungreased 13x9x2 baking dish (I spray mine with PAM). Spread about 1/4 c. beef mixture down center of each tortilla, top with 1-2 tb. cheese. Roll up tightly, place seam side down over sauce. Top wih remaining sauce. Cover and bake at 350* for 30-35 min. Sprinkle with remaining cheese. Bake, uncovered, 10-15 min. until cheese is melted. yield 4-6 servings.
