Recipe Introduction
Very yummy. It says to marinate 20 min. before putting in the oven, but I didn't and it turned out fine.
List of Ingredients
4 salmon fillets (about 6 oz each)
coarse salt and ground pepper
2 c. packed fresh basil leaves, thinly sliced crosswise (I don't think I used 2 c., probably more like 1 c. and it was fine)
1 lg. shallot, thinkly sliced crosswise (about 1/4 cup)
grated zest of 1 lemon (2-3 tsp) (I just zested my lemon and didn't measure)
2 tb. fresh lemon juice (I just used all of the juice from the lemon I zested)
1 tb. olive oil
lemon wedges, for serving (optional) (we didn't use them)Recipe
Lightly season salmon w/ salt and pepper; arrange in a 9x13" baking dish, about 1" apart.
In small bowl, stir basil, shallot, zest and juice, oil, 1/4 tsp salt, and a pinch of pepper. Dividing evenly, spread mixture over the fillets. Cover w/ foil; place in refrigerator, and let marinate 20 min. (I didn't do this, and it turned out fine) Preheat oven to 325*. Bake (still covered) until salmon is opaque throughout, 20-25 min. Serve w/ lemon wedges, if desired.
