Recipe Introduction
I first heard these existed from my mexican friend, Margarita. She verbally told me how her father made them and I read several recipes on various mexican websites. So, this is my rendition of them! This is one of my favorite things to eat on a tortilla!
List of Ingredients
5 lb. boneless pork roast, cut into 2" chunks
2 cups of milk
rind of one orange
1/2 of a medium onion, coarsley chopped
1 tb. chopped garlic
1 tb. dried parsley
1 tb. dried cilantro
1/2 tsp. oregano
salt and coarse black pepper to tasteRecipe
Spray 13x9 cake pan with PAM. Add chunks of meat in one layer on bottom. Sprinkle orange, onion and seasonings over meat. Pour milk over. Bake at 325* for about 2 hours or so, uncovered, turning meat over occassionally until most of fluid is evaporated and meat is tender and glazed.
Shred meat on tortillas and top with favorite toppings...cheese, sour cream, guacamole, lettuce, tomatoes, onions, salsa.
This will feed 6-8 people.
P.S. You can adjust spices to taste. I don't think Margarita uses garlic, but I'm a garlic lover and found it as an ingredient in other recipes.
