    List of Ingredients








    1/4 pound sliced prosciutto or smoked ham, chopped
    1/4 teaspoon freshly ground pepper
    1/8 teaspoon sage
    3 tb. olive oil
    1/4 cup chopped onion
    1 teaspoon minced garlic
    1/2 teaspoon salt

    1/2 teaspoon rosemary, crumbled
    1 small can sliced mushrooms, drained
    4 large boneless, skinless chicken breast halves (1 1/4 to 1 1/2 lbs.)
    1/4 pound mozzarella shredded
    1/4 cup white wine
    Chopped fresh parsley, for garnish

    Spray baking dish with cooking spray. Lay chicken breasts flat. Drizzle wine and olive oil over breasts. Sprinkle with all seasonings except parsley. Sprinkle with mushrooms and onion. Sprinkle proscuitto over top. If no fluid in bottom of pan, can put some of liquid from can of mushrooms. Cover with foil and cook at 350* for 30 min. Remove foil. Probably will be quite a bit of liquid. If not, may have to add a little. Mine had plenty. Cook 15 more min. Pour off liquid except for about 1/2 cup in bottom. Sprinkle with cheese and parsley. Cook 15 more min. Yum!
    I served with mashed, parslied potatoes and a salad with a vinagrette dressing.
