Chicken Stir - Fry Wraps

I made these for dinner tonight. Very good.
List of Ingredients
1 1/2 lb. boneless, skinless chicken breats, halved horizontally and thinly sliced
coarse salt and ground pepper
2 tb. olive oil
1 lg. onion, halved and thinly sliced
1 lg. red bell pepper, thinly sliced
3 garlic cloves, minced
1 1/2 tsp. grated peeled fresh ginger
1/4 to 1/2 tsp red pepper flakes
3 tb. soy sauce
3 tb. rice vinegar
1 1/2 tsp cornstarch mixed with 1 tb. water

Season chicken w/ salt and pepper. In lg skillet, heat 1 tb. oil over med high heat. Add chicken and stir fry until opaque throughout, 2-4 min. Transfer to place. Add remaining tbspoon oil to pan along with onion and bell pepper. Cook, stirring constantly until onion is tender and golden, about 4 min. Reduce heat to med, add garlic, ginger and red pepper flakes. Cook, stirring until fragrant, 30-60 seconds. Stir in soy sauce, vinegar and cornstarch mixture. Remove from heat. Add chicken and any accumulated juices; toss to coat. Serve in lettuce cups, holding like you would a taco.
