Recipe Introduction
Instead of making this recipe with chicken breast as suggested, I used it to marinade a 5# bag of chicken wing portions.
List of Ingredients
2-3 lb. bonless skinless chicken breasts
3/4 c. worcestershire sauce
1 can Bacardi Concentrated Margarita Mix
2 tb. vinegar
1 tb. garlic
1 lime, juiced
**it doesn't call for any salt, but although tasty, I felt that it needed a bit of saltRecipe
Rinse chicken and pat dry. Mix ingredients in a large bowl (do not dilute margarita mix). Put chicken in a non-metal bowl and pour marinade over. Refrigerate for at least 2 hours, but best if left overnight (I left overnight). Remove chicken from marinade. Pour marinade in saucepan and heat to boil over med heat. Let simmer 10 min. Grill chicken until done and occasionally brush with marinade until chicken is done. Serves 6-8.
