Aunt Jodi's Easy Pork Chop Meal

    Source of Recipe

my Aunt Jodi - McPherson, KS

    Recipe Introduction

My aunt Jodi gave this to me years ago. It is very easy and very good. I like to serve green peas with this.

    List of Ingredients

1 pkg. prepared Stove Top Stuffing or stuffing recipe below**
    6-8 pork chops
5 med potatoes, quartered and peeled
1 can cream of mushroom soup or golden mushroom soup
    1/2 can water

**2/3 c. butter, sm. onion chopped, 1/2 c. chopped celery...cook until tender...add water to moisten. Add thyme and poultry seasoning to taste...stir in 3 c. bread crumbs...(I just always use Stove Top Stuffing Mix)

    Recipe

Brown chops in skillet. Place in 9x13 pan. Top each chop with mounds of prepared dressing. Place potatoes around chops. Although the recipe doesn't call for it, I lightly salt & pepper the potatoes and chops. Mix can of soup with water and pour over all. Cover tightly with foil. Bake at 350* for 1 hr. Potatoes should be tender. Remove foil and let rest 5 - 10 min. before serving.
