    Pork Tenderloin with Honey Butter

    This was very good. I actually cooked the meat about double the time that the recipe called for, as I don't care for rare pork. So, I cooked it to between 160-170* on the meat thermometer.

    List of Ingredients




    4 tb. butter
    2 tb. honey
    1 1/2 lb. pork tenderloin
    coarse salt and black pepper
    1/4 c. water

    Recipe



    Preheat oven to 375*. In a dutch oven or ovenproof skillet, heat the butter and honey over med/low heat, stirring to melt butter. Season the pork with salt and pepper and place in pan. Turn the heat up to medium and cook until lightly browned on all sides. Reduce heat if honey begins to burn (it didn't when I made this). Transfer to over, and roast until pork is cooked to 145*, 12-15 min. Transfer pork to a plate. Add water to pan, and place on stove over med heat, cook, stirring with a woden spoon to scrape up all the browned bits. Simmer until sauce is reduced to about 1/2 cup. Slice pork and serve drizzled w/ the sauce.
