Pork and Green Bean Stir Fry

List of Ingredients
1 pork tenderloin (about 3/4 lb) trimmed of excess fat (I actually used some thin sliced, boneless pork instead)
2 tb. soy sauce
1 tb. rice vinegar
1 tsp sugar
3 tsp oil
2 tb. minced peeled fresh ginger (you probably could sub dried, but wouldn't be as good)
1/8 to 1/4 tsp red pepper flakes
1 lb. green beans, trimmed and broken in half
1 red bell pepper, cut into thin strips
1/3 c. dry roasted peanuts, chopped

Cut pork diagonally into 1/4 in. thick slices, cut each in half. Season w/ 1/2 tsp salt. In a small bowl, mix soy, vinegar and sugar; set sauce aside.
Heat 1 tsp of oil in lg skillet over med-high heat. Stir fry ginger, pepper flakes, and pork; stirring, until pork is no longer pink, about 3 min. Transfer to a plate.
Meanwhile, cook green beans in a med pot of boiling, salted water until crisp tender, about 4 min. Drain; dry w/ paper towels.
Add remaining tsp. oil to the skillet. Add beans, bell pepper and 2 tb. water, cook over high heat, stirring often, until peppers are tender, about 2 min.
Add peanuts, pork mixture and reserved sauce. Cook, stirring until pork is coated, about 1 min. Serve immediately, over rice, if desired.
