    This was very easy and good.

    List of Ingredients




    4 slices bacon, diced
    3 1/2 cups frozen southern style hash browns (I couldn't find them, so used frozen o'brien potatoes)
    1 c. chopped onion
    1/4 c. each red and green pepper, diced (I only used 1/2 of this since the O'Brien potatoes I used had diced peppers in them)
    2 cans (8 oz each) minced clams, undrained
    1 tsp. salt
    1/2 bay leaf
    2 c. milk
    1/8 tsp white pepper

    Recipe



    In dutch oven, over med high heat, cook bacon until crisp; remove from skillet. Add potatoes, onions and peppers to pan. Cook until are tender. Drain clams and set aside, reserving liquid. Add enough water to clam liquid to make 1 1/2 cups. Add liquid, salt and bay leaf to pan. Bring to boil. Reduce heat; cover and simmer 5 min. Lightly mash potatoes mixture. Stir in milk, clams, bacon and white pepper; heat to serving temperature. Do not boil. Yield: 6 servings
