Very comforting soup!
List of Ingredients
3# stewing chicken
3 qt. cold water
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. poultry seasoning
1/2 c. chopped celery
1 1/2 c. cooked rice
1/2 c. chopped onions
1 c. chopped carrots
1 c. stewed tomatoes
4 tb. butter or margarine
1 tb. chopped parsley
bit of garlic to taste (wasn't in original recipe, but I do add a bit to the recipe when I make it)Recipe
Cover chicken w/ water. Add seasonings and cook gently 1 1/2 to 2 hrs until meat is tender. Remove chicken to cool. Refrigerate broth until fat congeals and skim off. Dice meat, discarding skin and bones. Return to broth and reheat. Saute celery, onion and carrots in butter until tender. Add with tomatoes to broth. Add parsley, salt and pepper, garlic and poultry seasoning to taste. Cook gently 20 min. Add cooked rice just before serving. 8-10 servings.
