Larkin's Black Eyed Peas and Sausage

Recipe Introduction
You can adjust the heat with the type of sausage and Rotel that you purchase. Quick, and yummy served with cornbread.
List of Ingredients
3 cans black eyed peas
1 can Rotel tomatoes (I use mild)
1 lb. pork sausage (I use mild)
1 med. onion choppedRecipe
Saute sausage and onion until sausage browned and onions soft. If excess grease, can pour off. If the sausage is lean with just a bit of grease, I leave in for seasoning. Add peas (do not drain) and tomatoes. Stir and simmer about 30 - 45 min.
