    Recipe Introduction

My family does not like things too spicey/hot, so we toned down the pepper that was called for. We served it with sweet cornbread.

    List of Ingredients

    seasoning mix:
    2 bay leaves
    1 1/2 tsp salt
    1 tsp dried thyme leaves
    2 tsp chili powder
1 tsp white pepper (I used 1/3 of this)
1 tsp black pepper (I used 1/3 of this)
1 tsp crushed red pepper flakes (I used 1/3 of this)
    vegetable mix:
    1 c. chopped celery
    1 med onion, chopped
1 med green bell pepper, chopped

    3 tb. margarine
8 oz kielbasa, cut into 1/2 inch pieces
12 oz. boneless, skinless chicken breast, cut into bite sized chunks
    1 tb. chopped garlic
    2 c. favorite spaghetti sauce
    2 13-14oz. cans chicken broth
1-29 oz can white homin, drained
1-15 oz can black beans, drained and rinsed
    sour cream for garnish (opt)
grated monterey jack cheese for garnish (opt)

    Recipe

Combine seasoning mix. Combine vegetable mix. Melt butter in dutch oven over med. heat. Add kielbasa and saute 3 min. Add chicken and saute 5 min. Add seasoning mix, vegetable mix, garlic and saute 10 min. Add sauce, chicken broth, hominy and beans. Cover and simmer over low heat, 20 min. To serve, remove bay leaves. Garnish with dollop of sour cream and cheese. Can serve with flour tortillas or rice.
