    My own Cornbread Dressing/Stuffing

    Well, it's kinda in my head! for a 13x9 pan of dressing I'd cook and crumble when cool, an 8x8 pan of cornbread. Add about 1/2 loaf of bread crumbled or equal amount of dried bread/stuffing mix/crumbs. I'd chop up an onion, about a cup of celery and saute in a little butter till slightly tender and add. Throw in about 2 tsp. of salt and 1 tsp. of black pepper. I also add a little garlic powder, maybe 1/2 tsp. I put about 1-2 tsp. of poultry seasoning/sage. Toss all together. You can also add chopped, cooked chicken if you want to make this the maindish, but you don't have to. At holidays I put chopped, cooked, giblets from the turkey. I've also added drained canned mushrooms, dried cranberries or craisins, a few chopped pecans. But you don't have to. Anyway, melt about 1 stick of butter or margarine and drizzle over your tossed mixture. Add two eggs. Then add enough chicken broth to make VERY moist. Not soup, but VERY moist. At this point I usually taste of it to make sure it has enough seasoning, and if I need more salt or poultry seasoning/sage, I add it now. Bake in a sprayed pan at 325* for about 45 min. to an hour. I usually cover until the last 10 min. or so.
