Vidalia Onion Cornbread

1/4 c. butter (1/2 stick)
1 large vidalia or other sweet onion, chopped
1 - 8oz pkg corn bread/muffin mix (I use Jiffy)
1 egg, beaten
1/3 c. whole milk (I used skim)
1 c. sour cream
1 c. grated sharp cheddar cheese
1/4 tsp. salt
1/4 tsp. dried dill weedRecipe
Preheat oven to 450*. Spray an 8" square baking pan with cooking spray.
In med saucepan, melt butter and saute onion till tender but not brown, about 3 min. Remove pan from heat. Add muffin mix, egg, milk, sour cream 1/2 c. cheese, salt and dill weed. Stir to combine. Pour into pan. Top with remaining 1/2 c. cheese. Bake for 30 min, until set and toothpick inserted into the center of the bread comes out clean. Cool about 10 min before cutting into squares. Makes 16 squares
