    Green Beans w/ New Potatoes

    This is our favorite way to cook green beans.

    List of Ingredients




    1 # fresh green beans
    1/4 lb. salt pork, sliced (I omit this)
    1/4 c. bacon grease
    2 c. chicken broth plus more if needed (canned is fine)
    2-3 tsp Paula's House Seasoning
    12 small red potatoes, or more
    1 onion, cut into slivers

    Remove the ends from beans, snap in two, wash and set aside to drain. In large dutch oven, brown salt pork in bacon grease over med heat, 10 min. Toss green beans into the pot, stirring them with wooden spoon to coat well w/ pork fat. Add the stock and house seasoning. Cook over med low
    heat, covered tightly, for 30 min, or until beans are 1/2 done. While cooking, peel a center strip from each new potato with a potato peeler or paring knife. At the end of 30 min, add the potatoes and onion to the beans; add 1/4 c. more broth if needed. Cook, covered tightly, until the potatoes are tender, 25-30 min., periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the beans are wilted, 15 min. Serves 8-10

    ** I have used an equal amount of drained canned green beans and they turn out wonderful. I usually don't use the salt pork, as the bacon grease alone is enough for us. I use the canned chicken broth. Sometimes when I want to make a quick version of these with just green beans, I throw a couple cans of green beans in a pan, a chicken bouillion cube, a teaspoon of bacon grease (I keep a container in the freezer) and some of the House Seasoning (I keep this in a salt shaker for use in other cooking, also.

    Paula's House Seasoning:
    1 c. salt
    1/4 c. garlic powder
    1/4 c. black pepper

    Keep in shaker by the stove. Goes well with just about anything.
