Marinated Tomatoes

Delicious. After we ate the initial tomatoes out of the brine, I just cut up more tomatoes and reused the brine. Even the yukky winter supermarket tomatoes taste good after soaking in this.
List of Ingredients
Dressing:
3 tb. chop fresh parsley (I used dried)
1 tb. sugar
1 1/2 tsp garlic salt
1 1/2 tsp seasoned salt
1/2 tsp pepper
3/4 tsp dried oregano
3/4 c. veg oil
1/2 c. red wine vinegar
4 - 6 large tomatoes, cored, each cut into six wedgesRecipe
Place all of dressing ingredients together and whisk thoroughly. Place tomatoes in a resealable plastic bag and pour in the dressing. Marinate 4 - 5 hrs or overnight in the refrigerator. Bring to room temp before serving. Serve w/ a slotted spoon. Makes 6-8 servings.
*** Note - the tomates will keep for a few days in the dressing in the refrigerator.
