Recipe Introduction
Made these last night with our Black Eyed Pea fare...very yummy. The recipe calls to cover the greens with water, but I felt it would be too much water, and added about 1 qt. after I added the greens. When I prepared the greens for cooking, I fixed a big sink full of cold water...immersed the greens and then cut the thick stem out of each leaf (I used my kitchen shears). We had a smoked turkey for Christmas, so I had saved the wings in the freezer to cook in these greens.
List of Ingredients
2 smoked turkey wings 1/2 tsp sugar
3 # mustard greens salt to taste
1 # young, tender turnip greens
Recipe
Place wings in lg pot, and cover w/ water. Boil until nearly tender, about 45 min. - 1 hr. Wash and drain greens. Put in pot w/ cooked meat. Add sugar and season w/ salt. Add enough water to cover, and simmer till tender. Drain and reserve liquid, which is called pot liquor and will be very good the next day w/ corn bread. Remove meat from bones, chop and add to greens. Serve at once.
