    My family really liked this! Even my 7 year old son.

    List of Ingredients




    3 tb. butter
    3 tb. chopped onion
    1 lb. mushrooms, finely chopped
    3 tb. flour
    2 sp. salt
    1/4 tsp. pepper
    1/4 tsp. nutmeg
    2 c. half and half cream
    3 10-oz pkgs frozen spinach, thawed (I squeezed out excess fluid)
    1/4 c. grated swiss cheese (I used 1/2 c.)

    Saute onions and mushrooms in butter until transparent. Blend in flour, salt, pepper and nutmeg. Gradually add in the cream and stir until thickened. In well buttered baking dish, spread half the uncooked spinach. Cover with 1/2 the mushroom sauce. Repeat layers. Bake at 350* for 15 min. (uncovered). Sprinkle the cheese on top and return to oven until cheese is melted.
