    Lowfat Scalloped Potatoes

    5 potatoes, sliced thin
    1 cup grated, fat-free cheddar cheese
    1 tsp. salt
    1/2 tsp. black pepper
    1 cup skim evaporated milk
    1 cup hot water
    3 tbsp. all-purpose flour

    Recipe



    Make a sauce of 1 cup evaporated milk, 1 cup hot water, and 3 or 4 Tbsp of flour. Add salt & pepper. Cook sauce over low heat until thickened, stirring constantly. Peel & slice potatoes & cook in boiling water until tender.

    Place a layer of potatoes in bottom of a 2 quart baking dish. Sprinkle a layer of grated cheese over potatoes. Add a layer of white sauce. Repeat layers ending with cheese on top. Bake in preheated 400 degree oven for 30 minutes.
