    SLOPPY PITAS

    Chef's note: This 'dish' does best for breakfast or lunch, and perhaps dinner, if you're looking for a light meal. It has a very "breakfasty" affect on the consumer, and combines three very basic breakfast foods into one breakfast 'pocket' that gives the meal a new twist. It is perfect with a banana and a fruit juice or glass of milk, which makes it a complete meal.

    Serves: Approxomately 2 for a light meal, although the ingredients can be doubled as the consumer or chef sees fit.

    What you'll need:
    3 eggs
    2 pita breads (I prefer wheat because I think it works best as a toast substitute, but any can be used)
    butter, margerine or pam (to grease the pan)
    2 slices of shredded lunchmeat or 1/4 cup or so of diced ham basically, a meat of some sort (if you're really fancy you might use diced ham, but since most of us don't have that kind of time or that kind of thing sitting around in our fridge, you can always tear up some turkey breast lunchmeat)
    1/2 cup of cheese, preferably shredded, preferably cheddar, but, hey, we can always be creative
    water or milk

    Crack the 3 eggs into a bowl, add a small amount of water or milk and use a whisk or fork to mix until everything looks pretty smooth
    After you grease the pan with a little butter, scramble half of the eggs. Once they are nearly cooked, place the pan on a cool burner and add half of the cheese and half of the shreded/diced meat and mix it up. Then put the pan back on the burner for a while and basically heat it up, not cook it, just enough to basically melt the cheese and warm the meat. Then scoop the contents onto a plate. Take one of the pitas, and open it carefully (I find this process best when using a butter knife to separate the two sides), and scoop the contents off the plate into the pita. This creates a kind of open faced breakfast sandwich, which is often a bit sloppy (hence the name). Repeat the whole process with the other half of the indgredients, add a couple of bananas and a glass of juice, milk, or water, and you've got yourself a meal for two. You can also add salt, pepper, or seasoning for those of you who like their eggs with a lot of seasoning on them. Enjoy!

    Serves: 2
    Approximate time: 10-15 minutes (if you're really slow)

    Hey, it may not be gormet, but at least is a nice change from the boring old buttered toast, eggs, and meat.
