Hula Muffins (Carrot-Pineapple Muffins)

List of Ingredients
2/3 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup shredded carrots (about 1 1/2 medium sized)
3/4 cup canned crushed pineapple (well drained)
1 1/2 cups gold medal flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmegRecipe
1) Heat oven to 425 degrees. Put a paper baking cup in each 12 regular size muffing cups or grease just the bottom of 12 muffin cups.
2) Stir sugar, oil, eggs, carrots and pineapple in meduim bowl until well mixed. Stir in the rest of ingredients. Spoon batter into muffin cups.
3) Bake 13-17 munutes or until light golden brown or toothpick poked in center comes out clean. Cool 5 minutes. Loosen sides of muffins from pan if needed and take them out of the pan.
Makes 12 muffins
